Restaurant Business Opens to New Guidelines, Eager Customers

Curt Letnes and his family own restaurants across the upper Midwest, including Grizzly's Wood-Fired Grill and Boulder Tap House in St. Cloud, MN. The Letnes Restaurant Group rolled with the punches due to COVID-19 health restrictions placed on their restaurants in Minnesota, Wisconsin, Iowa and Nebraska. But they came out of that stressful time ready to open this summer. In this podcast, Letnes tells us what he learned about himself during the shutdown and shares his thoughts on the future.

Lessons Learned

  • Minnesota restaurants were able to open at 50 percent inside capacity on June 10, after being closed almost three months.
  • Curbside pickup isn’t a sustainable business model for many restaurants, especially ones without a drive-thru.
  • Patio business is also hard to sustain, especially with social distancing guidelines in place.
  • Restaurant owners need to conserve cash flow to prepare for possible future closures due to COVID-19.
